Cherry Bakewell muffins

Muffin Batter

60g melted butter

125g sour cream

1 large egg

150g caster sugar

1tsp Vanilla extract

1/4 tsp almond essence

165g plain flour

1/4 tsp salt

1/2 tsp baking powder

1/2 tsp bicarbonate of soda

75g washed dry chopped glacé cherries plus extra to top

a few toasted almond flakes to top.

For added indulgence make a hole in the top and pipe in a spoon of jam, use your favourite

Icing Drizzle

50g icing sugar

1/16 tsp almond essence

1 1/2 tsp whole milk
