Wafer Paper Lace

Recipe

3 Sheets of 0.3 Wafer Paper

200ml Boiling Water

Powder Colouring of your choice

Instructions

Rip up your paper and place it into a deep container, pour the boiling water over the top. The heat helps the paper to break down faster.

Either using a stick blender or food processor blitz the mix until completely smooth. If there are troublesome pieces then give it a sieve.

To add colouring just pop it into the mix and whizz it up.


Place your non stick pan on the highest heat, when it is hot add a tablespoon of the mix into the pan. Let it sit for 2-3 seconds and then wiggle the mix all around the pan, whilst keeping it just above the heat. When it has all spread as best you can around the pan place it back onto the heat you will hear it crackling. 

If there are big wet clumps gently using the back of your spatula spread it onto a dry space….but be careful if it has set you will rip the lace. (I it is getting too hot lift from the heat… too much heat will cause it to crumble)

The crackle will stop and the lace will lift remove this immediately and leave it on the side.

The wafer paper lace may feel brittle but if it is left out in the air or 30 mins to an hour it becomes pliable

Use water to stick the lace to fondant if it tries to come off use a cocktail stick to secure for 5 mins so it attaches and then remove.
