Instant Black “Connors” Buttercream

After creating a method of melting all of the butter for Black buttercream using Sugarflair Black Extra and Saracino Gel Colour using only 1/2 tsp of colouring, we understood some of the science behind what is required to make this. Then “Connors” was created and we realised that combining both of these methods would give an instant Deep coloured buttercream. Knowing the need for this we explored it more and are pleased to say we have DONE IT, using Saracino Gel Colours. We believe that Sugarflair will work too but it seems to go a deep navy blue before it turns, so isn’t as INSTANT as Saracino, but very close.

**** UPDATE You can also use CHEFMASTER Coral Black I used 1/4 tsp. This helps those across the pond!!

We also have added Xanthan Gum, do not skip this as it helps with the binding of the butter and the way the colour takes. Only use just under 1/8 tsp per batch as it can go gummy otherwise.

Ingredients

A block of “Real” Butter no oil this can be either 230g or 250g country depending

500g Icing Sugar

Heaped 1/2 tsp Saracino Gel Colour Black

Just under 1/8 Xanthan Gum

1 tsp Vanilla Extract ( or more if desired)
