Connors Mock Cream Cheese Buttercream

Ingredients

1 ½ tsp cider/white wine vinegar

½ tsp milk

½ tsp lemon

¼ tsp milk powder

¼ tsp salt

1 tsp Vanilla

500g Icing Sugar

250g Block Butter ( salted or unsalted for your taste)

Method

Begin by mixing the Mock solution together. In a bowl add the vinegar, milk, lemon, milk powder and salt together and set to the side. Place your butter into a microwave safe bowl and microwave in short bursts until its mostly melted, but still shows some lumps of butter (the temperature of the butter MUST not go above 30C as this will cause the butter to split). Add the vanilla and the sieved icing sugar. Mix this up using the paddle attachment, or by hand. Now pour in the “Mock”solution and stir until its all incorporated and silky. It is now ready to use and will be beautifully silky smooth. Add boiling water if needed.

This buttercream will amaze you, we really wanted to invent a recipe that tasted like cream cheese, BUT you didn’t have to worry about the issues with a perishable dairy product. So give it a go and you will be amazed…we were.
