Connors Vanilla Buttercream Tutorial and Recipe
This tutorial will guide you through the easiest version of “Connors”, which we believe is the best buttercream around. Suitable for every aspect of buttercream techniques from Smoothing a cake to Russian Tips.

Connors Buttercream Silk
Ingredients:
230g/250g Unsalted Butter
500g Icing Sugar
1-2 tsp Flavouring of your choice eg. Vanilla, Lemon etc
Method:
Place your butter into a microwave safe bowl and microwave in short bursts until its mostly melted, but still shows some lumps of butter (the temperature of the butter MUST not go above 30C as this will cause the butter to split). Add the vanilla and the sieved icing sugar. Mix this up using the paddle attachment, or by hand until its all incorporated and silky. It is now ready to use and will be beautifully silky smooth. Add boiling water if needed.
*If you want to colour Connors, add the colouring on the top of the to the butter,so it is exposed to the heat when you’re melting it. For deep colours use sugarflair extra or saracino. Only microwave it for 15 seconds initially with the colour on the top as it smokes and this helps the activation. Mix it all in then and continue to microwave until fully melted. For a batch this size you only need ½ tsp of colouring*
**For Chocolate add 1 Tbsp Cocoa Powder to the icing sugar and pour the melted butter over 100g of chocolate. Pop back into the microwave if needed ( keep it below 30C). Then continue as above. (For biscoff/nutella you can add these to the butter as well, using the same amounts)
