Chocolate Mini Egg Pavlova

Why not try it with your favourite chocky treat, replace the min eggs with honeycomb….fruit & nut….aero mint….or even the “marmite” of all chocolate Turkish Delight (hubby not me!!!)

Ingredients

Pavlova

6 Large Egg Whites (Approx 200g)

350g Caster Sugar

1 Tsp Vanilla Extract

1 & 1/4 Tsp Apple Cider/White Wine Vinegar

2 1/2 Tbsp Cocoa Powder

1/4 Tsp Coffee Powder (mix with the cocoa)

100g “Bashed” Mini Eggs

Cream

500ml Double Cream

1 Tsp Vanilla Extract

4 Tbsp Cocoa Powder

2 Tbsp Icing Sugar

100g “Bashed Up” Mini Eggs

Decoration

More Mini Eggs

Melted Chocolate or Ganache


Pre Heat your oven to 150CFan/170C/325F/Gas3

When you put the pavlova into the oven IMMEDIATELY reduce the temperature to 120CFan/140C/275F/Gas1

Bake for 1 hour and 20 mins then without opening the door turn off the oven and leave the pavlova inside for an hour.
