Brookie
This is our Brookie, its a hybrid Brownie - Cookie. If you love both you will love these. They are rich and chocolatey with a soft fudge centre and a chewy rich crust. Simple to make and go in a flash, even my non - sweet eating other half “Russ” steals them if I aren’t looking.
Ingredients
80g Millk Chocolate (We use Callebaut)
60g Dark Chocolate (We use Callebaut)
60g Butter
120g Caster Sugar
40g Brown Sugar
2 large Eggs
80g Plain Flour
1/2 tsp Baking Powder
1/8 tsp Salt
30g Cocoa Powder (We use Callebaut)
1 Tsp Vanilla
Method
Mix the Sugars, salt, Vanilla and eggs together and give them a good whisk, this will dissolve most of the sugar, mix in the Cocoa Powder.
Melt the chocolate and butter together, being careful not to overheat. Add this to sugar and eggs and combine thoroughly until you have a shiny mix.
Add in the flour and baking powder and combine until you have a smooth mix.
Cover and chill in the fridge for a couple of hours.
Preheat the oven to 180 degrees Centigrade and line a baking sheet with non stick baking paper.
Using a 3 tablespoon scoop, scoop a mound of the mix onto the baking sheet about 65g of mix, these spread a lot so I try to only bake 4 at a time on a standard UK size sheet.
Bake in the centre of the oven for 9 to 12 minutes, you will see the middle start to crack and have that traditional Brownie look.
