Chocolate Cake

Ingredients

  • 350g Self raising Flour (If using Plain add 1 tsp of baking powder, too)
  • 1 tsp Bicarb
  • Pinch of Salt
  • 300g Caster Sugar
  • 200g Light Brown Sugar
  • 110g Cocoa Powder
  • 250ml Cooled Boiled Water
  • 100ml Vegetable Oil
  • 100g Melted Butter
  • 4 Large Eggs
  • 1.5 tsp Vanilla Extract
  • 4 tbsp Buttermilk (You can make this with 4 tbsp of milk mixed with 1/2tsp lemon juice or vinegar. Wait for 10 mins until curdled it's then ready to use)

Method

Preheat your oven 170C/150C Fan/Gas 3/325F

  • Line and grease 3 x 8-inch tins.

  • Combine flour all the dry ingredients together, bicarb, baking powder, salt, sugars and cocoa powder using your spatula or hand whisk.

  • In another bowl, whisk together all of the wet ingredients, water, oil, eggs, vanilla, melted butter and buttermilk.

  • Then, either on low with a stand mixer or using a whisk/spatula, mix both of these until fully combined.

  • Do not over mix, just incorporate until it's all combined, this is a wet mix so don’t worry it is right.

  • Pour into a jug and tip evenly into the tins.

  • Put it into the oven and pop your timer on for 30 to 40 minutes. (all timings vary in different ovens)

  • Cakes will be done when there is no wobble, and bounce back to the touch or a cocktail stick comes out clean
